An elegant bathing destination of some repute in the early 1900s, it was immortalised in the 1960s film Two for the Road, starring Audrey Hepburn and Albert Finney. The current renovations at Beauvallon Sur Mer juxtaposing the original Belle poque bathing ro-tunda with radical modern architecture will result in a very contemporary setting. The latest addition, The Pavilion, is a dramatic deconstructed modernist cube created by celebrated Japanese architect Toyo Ito and master engineer Cecil Balmond. Housed in the restored rotunda, the Mirio res-taurant is the brainchild of Gui Gedda: chef, culinary historian, and a master of the Provenale kitchen. Gedda has married our modern Mediterranean set-ting to absolutely authentic cuisine. His key innova-tion at Mirio is his reinterpretation of gratto-biaso, a Provenale form of tapas or mezze. This is the first time that the tradition has been revived for a modern audience. Supporting small local producers who work with dedication and passion, Mirio celebrates the heart and soul of Provence and the Mediterranean. The near Olympic size pool on the beach laid with handmade dichroic glass tiles is reserved exclusively for the guests in residence at Le Beauvallon. A fully serviced private beach, boutiques and a water shut-tle service make this a stress free and easily accessed destination.Oncecompleted, bothLeBeauvallon and Beauvallon Sur Mer will be available year round.www.lebeauvallon.com 30 31 31'
